Directions
- Cut both chickens in spatcheback form
- Wash and clean chicken
- Pat chickens dry with paper towel
- Season chickens well and be sure to get seasonings underneath the chicken skins
- Marinate chicken overnight or for atleast 6 hrs
- Preheat oven to 360 degrees Fahrenheit for atleast 10 mins
- Add chickens to a baking rack ( be sure a container is underneath to catch the juices )
- Roast for 40 mins and be sure to baste chicken every 20 mins during roasting process
- Combine all sauce ingredients in a small sauce pan on stove top and simmer until it has thickened a bit
- Adjust oven temp to 400 degrees and set timer for another 30 minutes
- Glaze your chicken with sorrel sauce every ten minutes for the remaining 30 minutes roast time
