Red Stripe Sorrel Beer Glazed Roast Chicken

    3lbs Chicken
  • 3 tbsp
    Green Seasoning
  • 2 tbsp
    Maggie chicken seasoning
  • 2 tbsp
    All purpose seasoning
  • 2 tbsp
    Soy Sauce
  • 2 tbsp
    Sweet Chilli Sauce
  • 2 tbsp
    Oyster Sauce
  • 1
    Red Stripe Sorrel Beer
  • 1 tbsp
    Brown Sugar
  • 0.5 tbsp fresh grated
    Ginger
  • 0.25 cup
    freshly squeezed Orange Juice or Pineapple Juice
  • 6
    Pimento
Directions
  • Cut both chickens in spatcheback form
  • Wash and clean chicken
  • Pat chickens dry with paper towel
  • Season chickens well and be sure to get seasonings underneath the chicken skins
  • Marinate chicken overnight or for atleast 6 hrs
  • Preheat oven to 360 degrees Fahrenheit for atleast 10 mins
  • Add chickens to a baking rack ( be sure a container is underneath to catch the juices )
  • Roast for 40 mins and be sure to baste chicken every 20 mins during roasting process
  • Combine all sauce ingredients in a small sauce pan on stove top and simmer until it has thickened a bit
  • Adjust oven temp to 400 degrees and set timer for another 30 minutes
  • Glaze your chicken with sorrel sauce every ten minutes for the remaining 30 minutes roast time
